Straw yellow with copper highlights. Wide, penetrating nose with hints of hay, fresh nuts and toasted almonds. Plenty of spice, almond and dried pineapple character. Full bodied, with good fruit and a fresh, mineral aftertaste. An excellent aperitif, ideal with appetizers, soups, dishes based on eggs or fish. Also goes with citrus fruits starters, sliced sea bass, and cold white meats. Try it with rich pasta dishes, such as gnocchi with meat sauce.

Collavini's family enological history began in 1896. Eugenio, the founder, supplied the best udinese's families with his wines without ever imagining that a century later they would reach the world over. In 1970, a first innovative turn in the area of sparkling wines takes the winery to the peak of notoriety with Ribolla Gialla Brut, the result of careful research and an original method.
In 1980, the winery expanded the varieties of it its DOC production, and focused on its functional structures to enhance the standards of efficiency and quality. In 1996, the true quality turn took place with a comprehensive pogram that ranged from loyalty of the growers that provide the grapes, to the upgrading of the structures that take account of soft pressing and temperatre controlled vinification. Investments and technology, strict criteria's of characteristics and love for Friuli, place the winery within the peak of the territory's production with further space for growth and success.
Collavini Collio Pinot Grigio is a vendemmia tardiva, or late harvest wine. It stays on the vine for about 10 additional days. This ripening adds intensity, extract and bod. The wine undergoes traditional white wine fermentation with short maceration on the skins and controlled temperature fermentation in stainless steel tanks.
