This superb wine is produced from a blend of fruit grown on several Hawkes
Bay vineyards, predominantly in the Gimblett Gravels wine growing district,
namely Omahu Gravels, Ngakirkiri and Twyford Gravels. It's a blend of 64% Merlot, 26% Cabernet Sauvignon, and 10% Malbec. The free-draining stony soils and warm conditions of the Gimblett Gravels encourage low yields and devigourated vines. Grapes were harvested at optimal ripeness, the fruit was crushed and destemmed to open top fermenters. Post fermentation maceration was employed before
the wine was pressed to a selection of fine-grained French, American and
Hungarian oak barriques, where it underwent malolactic fermentation. Following 18 months of maturation, the wine was blended, lightly egg-white fined and filtered to bottle.
