It is also ideal for pairing with especially oily fish tartare, sushi or sashimi or white meats.

Paco & Lola comes from 500 sun-kissed acres of vineyards in Meano (Pontevedra) where the Rosalia de Castro Winery is situated in an area considered to be the cradle of Albarino wine. In the heart of the Salnes Valley, this special area of northwest Spain is making some of the country s most interesting white wines.
Belonging to the DO Navarra, Paco is made with varieties of Tempranillo-Garnacha grape (50/50) harvested in vineyards of the subzone Valdizarbe, one of the great Spanish wine-producing areas of quality due to the influence of three different climates: Atlantic climate, Continental and Mediterranean. The main characteristic that lends this confluence of a weather is extremely long maturation period, it can maintain good acidity while an increase of sugars produced in the berries. This wine is fermented in stainless steel vats that are temperature controlled.
