Alta Vista’s Premium line is made from a careful selection of their old vines mainly from the Serenade Vineyard, in the Lujan de Cuyo region.
Argentina’s Mendoza valley is one of the most beautiful wine regions in the world.
The grapes are all hand harvested into small crates which are emptied onto a sorting table for further scrutiny before going into the tanks. Any underripe, damaged or unhealthy grapes are removed before they can make it into the wine.
To extract the maximum color and aromatics, the winemakers place the grapes into temperature controlled tanks for pre-fermentation maceration. Only natural yeasts present on the grape skins are used for fermentation (in the Monte Lindo also) which takes a week in stainless steel tanks at a temperature between 28 and 30°C. During this period, the wine is regularly pumped over.
After the alcoholic fermentation is complete, the wine is left for a 15 - 20 day post-fermentation maceration. The wine receives a daily pumping over to extract even more flavor and color.
Following this extended vinification, half of the wine is put into oak barrels for between 8–10 months. A mix of 80% French and 20% American oak barrels are used. Allow this wine to breathe at least 30 minutes before pouring.
